- 8 oz pasta (penne or rotini)
- 1 cup chicken broth
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 1 cup diced tomatoes (canned or fresh)
- 1 onion, diced
- 3 cloves garlic, minced
- 1 tsp Italian seasoning
- Salt and pepper to taste
Instructions
- Place the chicken breasts at the bottom of the crockpot and season lightly with salt and pepper.
- Add the diced onion, minced garlic, diced tomatoes, chicken broth, heavy cream, Italian seasoning, salt, and pepper.
- Stir to combine the ingredients.
- Cover and cook on low for 6-7 hours or high for 3-4 hours.
- About 30 minutes before serving, add the pasta and stir well to combine.
- Once the pasta is cooked, stir in the grated Parmesan cheese until melted and creamy.
