- 1 boneless pork loin
- 1 cup fresh or frozen cranberries
- 1 orange, zested and juiced
- 2 tablespoons honey
- 1 teaspoon Dijon mustard
- 1 tablespoon fresh rosemary, chopped
- Salt and pepper to taste
- Optional: garlic and cinnamon for added flavor
Instructions
- Preheat oven to 375°F (190°C).
- Pat the pork loin dry and season with salt and pepper.
- In a small bowl, mix cranberries, orange zest, orange juice, honey, Dijon mustard, and rosemary.
- Heat a skillet over medium-high heat and sear the pork on all sides until browned.
- Transfer the pork to a roasting pan and pour the cranberry-orange mixture over it.
- Roast in the preheated oven until the internal temperature reaches 145°F (63°C), about 25-30 minutes.
- Let the pork rest for 10 minutes before slicing.
- Serve with the drizzled sauce on top.
Notes
For leftovers, store in an airtight container and cover with sauce to keep moist. Reheat in the microwave or low oven with broth if necessary.
