Description

Ingredients

  • Fresh green beans
  • Potatoes (russet or Yukon Gold)
  • Bacon
  • Ranch seasoning mix
  • Salt (to taste)
  • Pepper (to taste)
  • Butter or olive oil (for cooking)

Instructions

  1. Wash and trim the green beans and peel and cut the potatoes into bite-sized pieces.
  2. In a large skillet, cook the bacon over medium heat until crispy. Remove the bacon and leave the bacon fat in the pan.
  3. Add the potatoes to the skillet and cook for 5-7 minutes until they begin to soften.
  4. Add the green beans, ranch seasoning, salt, and pepper to the skillet. Stir to combine.
  5. Cover and cook for an additional 10-15 minutes until the vegetables are tender, stirring occasionally.
  6. Crumble the cooked bacon and add it back to the skillet. Toss to combine and serve warm.

Notes

For extra flavor, consider adding garlic powder or cheese towards the end of cooking. Squeeze some lemon juice over the dish before serving for a fresh kick.
