A warm and comforting slow cooker beef stew that simmers all day to deliver tender meat and soft vegetables, perfect for busy weeknights.
Ingredients

- 2 lbs beef chuck, cut into 1-inch cubes
- 4 cups beef broth
- 4 medium carrots, sliced
- 4 medium potatoes, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 tablespoons tomato paste
- 1 teaspoon thyme
- 1 teaspoon rosemary
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- In a large skillet, heat olive oil over medium-high heat. Add beef cubes and brown on all sides.
- Transfer the browned beef to a crockpot.
- Add carrots, potatoes, onion, garlic, beef broth, tomato paste, thyme, rosemary, salt, and pepper to the crockpot. Stir gently to combine.
- Cover and cook on low for 8-10 hours or high for 4-5 hours, until the beef is tender and the vegetables are cooked through.
- Serve warm, taste, and adjust seasoning as desired.
Notes
Leftovers will taste even better the next day. Store in airtight containers and reheat gently. Great for freezing!
