Ingredients

- 2 lbs beef chuck, cut into 1-inch cubes
- 4 cups beef broth
- 4 medium carrots, sliced
- 3 medium potatoes, cubed
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 2 tablespoons tomato paste
- 1 teaspoon dried thyme
- 1 bay leaf
- Salt and pepper to taste
- 2 tablespoons vegetable oil
Instructions
- Heat the vegetable oil in a large pot over medium-high heat.
- Sear the beef cubes in batches until browned, then set aside.
- In the same pot, sauté onion and garlic until softened.
- Add the tomato paste and cook for a minute until darkened.
- Return the beef to the pot and stir to combine.
- Add beef broth, carrots, potatoes, thyme, bay leaf, salt, and pepper. Stir to combine.
- Bring to a boil, reduce heat, cover, and simmer for 1.5 to 2 hours until beef is tender.
- Remove bay leaf before serving and adjust seasoning as needed.
Notes
This stew improves with time; it tastes even better the next day after resting. Serve with warm biscuits or crusty bread.
