Description

A comforting, easy crock pot version of Classic Chicken Noodle Soup that brings everyone to the table.


Ingredients

Scale
  • 2 boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 medium carrots, sliced
  • 2 stalks celery, chopped
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 cups egg noodles
  • 6 cups chicken broth
  • 2 tablespoons fresh parsley, chopped
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Set a large pot over medium heat. Add a splash of oil if desired.
  2. Add chicken breast, carrots, celery, onion, and garlic to the pot. Stir together and sauté.
  3. Pour in chicken broth and bring the mixture to a boil.
  4. Reduce heat and let it simmer for 25-30 minutes until chicken is cooked through.
  5. Add egg noodles to the pot and cook for an additional 10 minutes until tender.
  6. Taste the soup and adjust seasoning with salt and pepper as needed.
  7. Stir in fresh parsley just before serving.
  8. Ladle soup into bowls, garnish with parsley, and serve.

Notes

If the soup looks too thin after adding noodles, let it simmer longer or add a teaspoon of flour dissolved in water to thicken. Store leftovers in an airtight container, and if reheating, add a splash of broth if noodles have soaked up too much liquid.
