Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, whisk together the flour, baking powder, salt, and cinnamon.
- In another bowl, cream the softened butter with the granulated and brown sugars until fluffy.
- Beat in the egg and vanilla extract until smooth.
- Gradually mix the dry ingredients into the wet mixture until just combined.
- Prepare the filling by combining the brown sugar and cinnamon in a small bowl.
- Spread half of the dough on parchment paper, sprinkle with the filling mixture, then roll it up tightly.
- Slice into rounds and place on a baking sheet lined with parchment paper.
- Bake for 10-12 minutes or until lightly golden brown.
Notes
Best served warm. Store in an airtight container at room temperature to keep them soft and chewy. Can be reheated in the microwave for 10-15 seconds or in a toaster oven at 300°F.
