- 12 large eggs
- 1 cup milk or cream
- 24 oz frozen hash browns
- 2 cups shredded cheddar or pepper jack cheese

- 1/2 cup diced bell peppers
- Salt and pepper to taste
Instructions
- Layer the frozen hash browns at the bottom of the crock pot.
- Add the cooked sausage or bacon over the potatoes.
- Top with diced vegetables and most of the cheese.
- In a bowl, whisk together eggs, milk, salt, and pepper.
- Pour the egg mixture over the layered ingredients in the crock pot.
- Cover and refrigerate overnight.
- In the morning, cook on low for 7-8 hours or high for 3-4 hours, checking doneness with a knife.
- Serve warm with toppings like salsa, sour cream, or additional cheese.
