Ingredients

  • 3 large chicken legs/thighs
  • 56 scallions/spring onions
  • 1 inch ginger
  • 6 garlic cloves
  • 4 cups chicken broth
  • 2 cups egg noodles
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot, cook the chicken legs/thighs in the chicken broth over medium heat until fully cooked.
  2. Remove the chicken, let it cool, then shred the meat.
  3. In the same pot, add chopped scallions, ginger, and minced garlic. Sauté for a few minutes until fragrant.
  4. Add the egg noodles to the pot and cook according to package instructions.
  5. Return the shredded chicken to the pot, season with salt and pepper, and heat through.
  6. Serve hot, garnished with fresh parsley.
