Ingredients

- 1 lb Boneless skinless chicken thighs
- 1 lb Smoked sausage
- 1 Onion, diced
- 1 Bell pepper, diced
- 2 Celery stalks, diced
- 1 cup Long grain rice
- 2 tbsp Cajun seasoning
- 4 cups Chicken broth
- 3 cloves Garlic, minced
- 1 can Diced tomatoes
- 2 Green onions, chopped
- 2 tbsp Oil
- Salt, to taste
- Pepper, to taste
Instructions
- In a large pot, heat oil over medium heat until shimmering.
- Add diced onion, bell pepper, and celery; sauté until softened, about 5 to 7 minutes.
- Stir in minced garlic and cook for 1 minute until fragrant.
- Add chicken thighs and sausage, cooking until browned.
- Stir in rice, diced tomatoes, chicken broth, and Cajun seasoning; coat rice and toast slightly.
- Bring the mixture to a boil, then reduce heat, cover, and simmer for about 20-25 minutes until rice is cooked.
- Fluff with a fork and garnish with chopped green onions before serving.
Notes
Leftovers keep well; refrigerate for up to 4 days or freeze for up to 3 months. Reheat gently to restore moisture.
