Description
A moist and dense flourless cake made with dark chocolate and ground almonds, perfect for family gatherings and celebrations.
Ingredients

- 1 cup ground almonds
- 6 ounces dark chocolate
- 2 tablespoons cocoa powder
- 4 large egg whites
- 1/2 cup sugar
- 1/4 cup butter
- Pinch of salt
- Powdered sugar for dusting (optional)
Instructions
- Preheat the oven to 350°F (175°C) and grease an 8-inch round cake pan.
- Melt the dark chocolate and butter together over a double boiler or in the microwave. Allow to cool slightly.
- In a separate bowl, whisk the egg whites with a pinch of salt until stiff peaks form.
- Gradually add the sugar to the egg whites, continuing to whisk until well combined.
- Fold the melted chocolate mixture into the egg whites gently.
- Sift in the ground almonds and cocoa powder, folding until just combined.
- Pour the batter into the prepared cake pan and smooth the top.
- Bake for 25-30 minutes or until a skewer inserted comes out with a few moist crumbs.
- Allow to cool in the pan for a few minutes, then turn out onto a wire rack to cool completely.
- Dust with powdered sugar before serving.
Notes
This cake can be stored at room temperature for 1-2 days or refrigerated for up to 5 days. It can also be frozen and reheated for a fresh taste.
