- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 teaspoon peppermint extract
- 2 ½ cups all-purpose flour
- ½ teaspoon salt
- Red gel food coloring, as needed
- ¼ cup granulated sugar (for rolling)
Instructions
- In a large mixing bowl, cream together the butter and sugar until light and fluffy.
- Add the egg, then mix in the vanilla and peppermint extracts.
- Gradually add the flour and salt, mixing until a soft dough forms.
- Divide the dough in half, leaving one half plain and coloring the other with red gel food coloring.
- Wrap both portions of dough in plastic wrap and chill for at least 30 minutes.
- Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
- Roll 1 teaspoon of each the red and plain dough into 4-inch ropes.
- Twist the red and white ropes together and shape into candy canes or rings.
- Roll cookies in granulated sugar and place on the prepared baking sheet.
- Bake for 8–10 minutes until just set, then cool for 5 minutes before transferring to a wire rack.
Notes
These cookies can taste even better the next day as flavors meld together. Store in an airtight container at room temperature or refrigerate for freshness.
