Description

A comforting Cajun Jambalaya that brings warmth and flavor to the table, combining chicken, sausage, and shrimp with vibrant vegetables and rice.


Ingredients

  • 1 pound chicken, diced
  • 1 pound shrimp, peeled and deveined
  • 1 pound sausage, sliced
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 2 celery stalks, chopped
  • 4 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups chicken broth
  • 2 cups long-grain rice
  • 2 tablespoons Cajun seasoning
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Green onions, for garnish

Instructions

  1. Heat olive oil over medium heat in a large pot.
  2. Add chicken and sausage, cooking until browned.
  3. Stir in onion, bell pepper, celery, and garlic; cook until glossy and tender, about 5-7 minutes.
  4. Add diced tomatoes, chicken broth, Cajun seasoning, salt, and pepper; bring to a boil.
  5. Stir in rice, reduce heat, cover, and let simmer for 20-25 minutes or until rice is cooked and liquid is absorbed.
  6. Add shrimp in the last 5 minutes of cooking, stirring gently.
  7. Fluff with a fork and garnish with green onions before serving.

Notes

Serve family-style and balance the spice with extra green onions and a light dessert. Leftovers taste even better the next day.
