Description

Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1/2 cup butter, softened
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 tablespoon instant coffee granules
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • Raw sugar for topping

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  3. Beat in the egg and vanilla extract.
  4. Dissolve the instant coffee granules in a tablespoon of hot water and add to the mixture.
  5. In another bowl, whisk together the flour, baking soda, and salt.
  6. Gradually combine the wet and dry ingredients, mixing until just combined.
  7. Drop spoonfuls of dough onto a baking sheet lined with parchment paper.
  8. Sprinkle raw sugar on top of each cookie.
  9. Bake for 10-12 minutes, or until the edges are golden.
  10. Allow to cool on a wire rack and enjoy with coffee.

Notes

For a lighter cookie, consider substituting half of the brown sugar with coconut sugar. You can also chill the dough for 30 minutes for extra flavor depth.
