- 1 tablespoon instant coffee granules

- 1/4 teaspoon salt
- Raw sugar for topping
Instructions
- Preheat the oven to 350°F (175°C).
- Cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
- Beat in the egg and vanilla extract.
- Dissolve the instant coffee granules in a tablespoon of hot water and add to the mixture.
- In another bowl, whisk together the flour, baking soda, and salt.
- Gradually combine the wet and dry ingredients, mixing until just combined.
- Drop spoonfuls of dough onto a baking sheet lined with parchment paper.
- Sprinkle raw sugar on top of each cookie.
- Bake for 10-12 minutes, or until the edges are golden.
- Allow to cool on a wire rack and enjoy with coffee.
Notes
For a lighter cookie, consider substituting half of the brown sugar with coconut sugar. You can also chill the dough for 30 minutes for extra flavor depth.
