Description

Ingredients

  • 4 boneless skinless chicken thighs
  • 2 cups mushrooms, sliced
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large baking dish, combine the chicken thighs, sliced mushrooms, minced garlic, olive oil, thyme, salt, and pepper.
  3. Toss until the chicken and mushrooms are evenly coated.
  4. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and no longer pink in the center.
  5. Garnish with fresh parsley before serving.

Notes

Feel free to use cremini mushrooms instead of white mushrooms. The dish can also be adapted for slow cooking by layering everything in a slow cooker on low for 4-6 hours.
