Ingredients

  • 13 teaspoons Biscoff cookie butter
  • ½ cup butter (room temperature)
  • ½ cup Biscoff cookie butter
  • ½ cup brown sugar
  • ⅓ cup granulated sugar
  • 1 large egg (room temperature)
  • 2 teaspoons vanilla
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1½ cups all-purpose flour
  • 2 tablespoons Biscoff cookie butter (for drizzling on top)
  • Flaked salt (for sprinkling on top)

Instructions

  1. Scoop 13 one teaspoon-sized balls of Biscoff cookie butter onto a piece of parchment or wax paper and place them into the freezer to freeze.
  2. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
  3. In a medium bowl, place the butter and ½ cup of Biscoff cookie butter. Mix together until smooth.
  4. Add both sugars and mix until light and fluffy.
  5. Crack the egg into the bowl, add the vanilla, and mix until combined.
  6. Toss in the salt, baking soda, and flour. Mix on low, being careful not to overmix.
  7. Scoop the dough into large balls using a 3-tablespoon cookie scoop.
  8. Bring the frozen Biscoff cookie balls out from the freezer and push them into the cookie dough balls, ensuring they’re completely covered.
  9. Place 6-7 cookies on the prepared baking sheets, allowing space in between.
  10. Bake the cookies for 11-13 minutes or until golden brown along the edges.
  11. Melt 2 tablespoons of cookie butter in the microwave for 15-20 seconds. Drizzle over baked cookies and sprinkle with flaked salt.
  12. Allow cookies to cool and set before serving.

Notes

Store cookies in an airtight container at room temperature for up to a week, or refrigerate for up to two weeks. Reheat in microwave for 10-15 seconds or warm in oven at 300°F for about 5 minutes.
