- 2 cups flour
- 2 tsp baking powder
- ½ tsp salt
- 1 cup sugar
- 1 tbsp orange zest
- ¾ cup orange juice
- ¼ cup melted butter
- 2 eggs
- 1 tsp vanilla extract
- 1½ cups cranberries
- Powdered sugar (optional)
Instructions
- Preheat your oven to 350°F. Grease a 9×5-inch loaf pan generously.
- In a large bowl, whisk together the flour, baking powder, salt, sugar, and orange zest.
- In another bowl, combine the orange juice, melted butter, eggs, and vanilla extract. Whisk until smooth.
- Add the wet ingredients to the dry mixture and fold gently to combine.
- Gently fold in the cranberries.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake in the preheated oven for 50–60 minutes until a toothpick comes out clean.
- Let it cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.
- Dust with powdered sugar before serving, if desired.
Notes
Store wrapped tightly in plastic wrap to keep fresh for 3-4 days. Freezing is an option for longer storage.
