Description

Ingredients

Scale
  • 2 cups flour
  • 2 tsp baking powder
  • ½ tsp salt
  • 1 cup sugar
  • 1 tbsp orange zest
  • ¾ cup orange juice
  • ¼ cup melted butter
  • 2 eggs
  • 1 tsp vanilla extract
  • 1½ cups cranberries
  • Powdered sugar (optional)

Instructions

  1. Preheat your oven to 350°F. Grease a 9×5-inch loaf pan generously.
  2. In a large bowl, whisk together the flour, baking powder, salt, sugar, and orange zest.
  3. In another bowl, combine the orange juice, melted butter, eggs, and vanilla extract. Whisk until smooth.
  4. Add the wet ingredients to the dry mixture and fold gently to combine.
  5. Gently fold in the cranberries.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake in the preheated oven for 50–60 minutes until a toothpick comes out clean.
  8. Let it cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.
  9. Dust with powdered sugar before serving, if desired.

Notes

Store wrapped tightly in plastic wrap to keep fresh for 3-4 days. Freezing is an option for longer storage.
