A warm and filling dish perfect for Halloween gatherings, combining chicken, colorful vegetables, and cheese served over tortilla chips.
Ingredients

- 2 cups of diced chicken (or your protein of choice)
- 1 cup of green bell peppers, chopped
- 1 cup of black beans, drained and rinsed
- 2 cups of corn (frozen is fine)
- 1 cup of salsa (choose your heat level)
- 1 tablespoon of cumin
- 1 tablespoon of chili powder
- Salt and pepper to taste
- 1 cup of shredded cheese
- Tortilla chips for serving
- A splash of sour cream or Greek yogurt for garnish
Instructions
- Spray slow cooker with cooking spray for easy clean-up.
- Place diced chicken at the bottom for a flavor base.
- Layer chopped bell peppers, black beans, and corn on top of the chicken.
- Pour salsa over the layers.
- Add cumin, chili powder, salt, and pepper.
- Cover and cook on low for 6-8 hours (or high for 3-4 hours).
- 15 minutes before serving, add shredded cheese to melt.
- Serve the dish over tortilla chips with a dollop of sour cream.
Notes
Leftovers can be stored in airtight containers for 3-4 days. Reheat in the microwave or on the stove, adding broth if needed.
